Power Breakfast for a Busy Day

I no longer start my workdays without having a breakfast ritual situation before that! When I skip it, it usually becomes a really bad and grumpy day (yes, I know myself well ;)). That being said, not every body works the same way, and you get to figure out what works for your body.

 
 

Here’s one of my most recent breakfast favorites: Buckwheat-Amaranth Breakfast Bowl

This is great if you’re busy and don’t have much time for cooking in the morning. To prepare this for 2-3 days, soak 1-2 cups of buckwheat overnight or for at least 4 hours, rinse well, and keep in the fridge. Cook 1-2 cups of amaranth and also keep in the fridge.

In the morning:

  • put a few spoonfuls of buckwheat and amaranth into your food processor (2 minutes)

  • warm up some frozen berries in a pot with a bit of water (2 minutes)

  • top with

    • sliced banana

    • passion fruit

    • vegan yogurt

    • activated nuts (soaked overnight and rinsed well)

    • cacao nibs

    • hemp seeds

    • peanut butter

    • ….

The fun thing about this breakfast is that you get to mix and match it with whatever you have at home and with whatever you crave on that day! Have fun making your breakfasts creative and nourishing with lots of vitamin L (=Love)!
